How to: Homemade Pan Mee Noodles


I wonder if they would spell my name correctly if I were to say "my name is Eleanie Tan"?

In the mean time, want to learn how to make a Malaysian noodle dish?

How to: Homemade Pan Mee Noodles


Ingredients (enough for 2):
  • Plain Flour (100grams)
  • Corn Flour (small handful)
  • Salt & Pepper (suit yourself)
  • Water (1 tbsp)
  • Egg (1)

You will need:
  1. Rolling Pin
  2. Extra flour to prevent dough from sticking
  3. A place to dry your flatten dough



How to make Pan Mee Noodles

Have fun playing with dough like I did!

Leave the flat dough to dry for 15mins. Fold the flatten dough to a tube shape and slice it as you like. Otherwise don't fold because some people like it teared :) It's called "nie" in Mandarin.

I googled a picture of the noodle with soup.
I did not make the whole meal because I did not have enough soup ingredient.
:) There are a few ways to cook your noodles!

How to: Sweet & Sour Chicken


I've dreaded cooking sweet and sour chicken (supposed to be pork), but finally did it!

Sweet & Sour Chicken

Venue: Adelaide

I used packet sauce, obviously.
  1. Cover your chicken/pork with egg and then flour (which I didn't use because I didn't have any)
  2. Use oil to deep fry it until it is golden.
  3. Drain the oil.
  4. Pour sweet & sour sauce in new stir fry pot, then put capsicum (I didn't use because I don't like and don't have any) and vegetables, perhaps baby corn. Up to you.
  5. Then finally chicken!

How to: Tamago Sushi

How to make Tamago Sushi
卵すしの作り法

Mix or beat enough amount of eggs (depending on the non-stick pan diameter size, estimate the amount of egg needed for the thickness).
  1. Pour a layer of egg, wait until it's mostly cooked on the underside, roll the egg according to picture shown.
  2. Pour another equal layer of egg, repeat No.1, then roll the first rolled egg on top of the new layer. (Make sure the second layer is NOT fully cooked before you roll!)
  3. Repeat motion No.2 until thickness is 2cm.
  4. Slice the sides of the cooked omelette, then slice the omelette to your desired thickness for sushi making.
Note: The width of the egg is shown in the picture below. 2 cm wide.

Sushi Making

This is how I make sushi!



I prepared a variety of ingredients I want in my sushi. It doesn't have to be exactly what the Japanese or Koreans eat. It's what you like in your sushi. Have your limits, because not all type of food goes well with seaweed and rice. However, suit yourself! :)



I had:
  • Cucumber
  • Hotdog (lol)
  • Tuna and onion
  • Onion
  • Carrot
  • Crab sticks
  • Smoked salmon
  • Wasabi
  • Mayonaise
  • Seaweed
  • Sushi roller

I can't explain better than the image. You will need the ready made bamboo thing I call the sushi maker...lolz. I messed up my first sushi! The seaweed was crumpled up because I held it too tight!

These are the best of all that I made, so now it's your turn! Have fun :)

Tips:
  1. Clingwrap your sushi maker (ready made bamboo sushi maker) as shown on right side of image 2 above. Why? It's cleaner and protects your sushi maker from being dirty.

  2. If you have trouble cutting your sushi, cling wrap it then cut.

  3. Use water to stick the remaining seaweed.

  4. Seaweed size should be according to the size of your sushi. If you want a small mini sushi roll, half of the prepared seaweed you buy from store is enough.

  5. Remaining cut out seaweed slice can be used as a holder (right side of image 2)

Micco's Cooking: Curry Chicken


Micco's Homecook Curry Chicken...
.... is the best in Adelaide!

'Must haves' ingredients:
  • Chicken (don't use breast fillet -.-")
  • Coconut Milk
  • A1 Curry Paste (note: good curry paste defines the goodness of the whole dish!)
  • Pandan leaves
  • Curry Leaves
  • Diced Potatoes
Add ons:
  • Bunga Kuntum
You must be thinking why I didn't use Spices?
It's in the Curry Paste. It's enough for me

MiccO's Cooking: Roasted Chicken Wings

Micco's Mix & Match Ingredients
I found/used/marinate chicken wings with:
  • Dark Soy Sauce
  • Soy Sauce
  • Mixed Herbs
  • Pepper
  • Butter
  • I think that's about it... =/ don't remember!

Oven Temperature was 225 degrees. *Note!* I was practically sitting in front of my oven watching my chicken turn Golden Brown. If you don't trust my cooking, haha...here's someone else's (you don't know) Roast Chicken Wing Recipe.

Man...this Roasted Chicken Wings was like an experiment I did with my oven.
Reason why I used oven - too lazy to wash pots and pans. LoL!
Didn't turn out too bad, ey?
Yes, it was a success. Tasted "almost" like the charcoaled ones we get from hawker stalls in Malaysia!

My first attempt in Fried Rice.
Ingredients:
  • Cooked Rice
  • Long beans (Diced)
  • Egg
  • Dark Soy Sauce
  • and that's it!

MiccO's Cooking: Curry Laksa


Ingredients for soup:
1. Malaysian curry paste
2. Coconut milk
3. Water
4. Chicken
5. Fishball

DO NOT cook the noodles with the soup. Have the soup prepared, use another pot for boiling the noodles (it changes the taste of soup). That way, remaining soup can be refrigerated for next boiling (if needed).

Suppose to have:
1. Been Sprouts (Taugeh)
2. Long beans
3. I don't remember...

The Process of Cooking Asian Food..hungry? *sLurpS*

"Why don't you put up pictures of good food in Adelaide since you're there?" asks someone. That's because cooking is good. The satisfaction is on the fact that I can experiment on combinations and make it a dish! How is that done?

1. Groceries shopping. Walk every single lane of the supermarket. Throw anything I think is useful in the basket. Never happy if the basket is not full. Refrigerator is full.. (Funny how my biscuits, cereals and milk go missing... it's okay. I'll use salt that isn't mine)

2. Stares at refrigerator, "I'll use this, this, that and this. Oh! and that too!" [Close refrigerator]

3. Chop..chop..wash..wash..rinse rinse...

4. Cook. What else? [1 hour later] Dinner is ready! Dinner is ready! I'm so hungry!

5. [Phone: Brrr Brrr] "I'm downstairs"... "Okay! Coming"

6. [Back in apartment] "mmmmm.....Smells good!"

7. *Smacks forehead* "Er.... hehe... why don't you..er...find something to do?"

8. Pour..Rinse..rinse..wipe..wipe..measure..measure..turn on switch..Push down "COOK" button.
"How long more 'til dinner is ready~~I'm hungry~"
"15-20 minutes!"

LoL! That's 'what' I ALWAYS forget.
